Begger's Chowder

Every year for my husbands birthday I make his favorite chowder, called Beggar's Chowder.  I discovered this about 4 years ago in a Crock Pot recipe book, I have adjusted it as years have past to find the perfect mix.  After 3 years I think I have it.



Prep Time: 30 minutes
Servings: 8
High: 3- 3.5 hours

1/4 cup unsalted butter, at room tempature
1/4 cup all-purpose flour
1 tablespoon garlic salt
1 tablespoon thyme
1 tablespoon sweet Hungarian paprika
1/2 teaspoon coarsely ground black pepper
4 chicken breast
2 cans (14 3/4 oz each) creamy-style sweet corn
1 can (10.5 oz) chicken broth
1 1/2 cups diced yellow onion
1 cup diced green peppers
1 cup diced red peppers
1 pound cleaned, stemmed white mushrooms, halved
1 can (14 1/2 oz) petite diced tomatoes, drained
1 1/2 cups heavy whipping cream
1/2 cup chopped cilantro
Salt and Pepper to taste
Serve with Hard Rolls; such as Chibata rolls


1. Coat your crock pot with non stick cooking spray or use a crock pot bag.
2. Combine your butter, flour, garlic salt, thyme, paprika and pepper in small bowl. Use back of a wooden spoon to work mixture into a smooth paste.  Cube the chicken, rub paste into the cubes.

3. Place chicken into crock pot, add corn, broth, onions and peppers.

4. Cover; cook on HIGH 3 hours or until chicken in fork tender. 

5. Add mushrooms and tomatoes to cooking liquid. Cover; cook on HIGH 30 minutes longer.

6. When mushrooms are tender, add cream and cilantro, cook 15 minutes or until heated through.  Add salt and pepper and serve with rolls.
